Children will need help from an adult! Don't forget to drink water while you hike.

Yield: 24 cookies

Serving Size: 1 cookie

Bake Time: 20 minutes

Ingredients:

  • 1/2 cup mixed nuts
  • 1/4 cup dried mixed fruit
  • 1-1/2 ripe bananas
  • 1/8 cup vegetable oil
  • 1-1/2 cups rolled oats
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/4 tsp cinnamon

Equipment:

  • Blender
  • Large bowl
  • Measuring cups
  • Measuring spoons
  • Cookie sheet
  • Fork

Directions:

  1. Preheat oven to 350° F.
  2. Chop nuts in blender and place in large bowl.
  3. Chop dried fruit in blender and add to chopped nuts in large bowl.
  4. Add bananas, vanilla, vegetable oil, rolled oats, salt, and cinnamon to bowl and mix well.
  5. Let mixture sit for 5 minutes.
  6. Using a spoon, place spoonfuls of dough on cookie sheet.
  7. Flatten each mound of dough with a fork.
  8. Bake dough for 20 minutes.
  9. Remove cookies from oven and let cool.

To Serve:

  • Package each cookie into a zip-top bag.

Fun Fact: Oatmeal isn’t just for breakfast anymore. Replace some of the flour in your recipes with rolled oats for a hearty healthy boost!
