"Rorin" Crunch Bars

Children will need help from an adult! Don't forget to drink water while you hike.

Yield: 12 servings

Serving Size: 1 bar

Prep Time: 15 minutes

Bake Time: 20 - 24 minutes

Ingredients:

  • 3/4 cup unsweetened applesauce
  • 4 egg whites
  • 1/4 cup apple juice concentrate, thawed
  • 1/4 cup vegetable oil
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2-1/2 cups low-fat granola
  • 2 cups (8 ounces) reduced-fat or fat-free cheddar cheese



Equipment:

  • Large mixing bowl
  • Medium mixing bowl
  • Measuring cups
  • Measuring spoons
  • 13 x 9 baking pan, lightly greased
  • Oven
  • Whisk
  • Zip-top bags

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, combine applesauce, eggs whites, apple juice concentrate, and oil. Mix well with a whisk.
  3. In a medium bowl, combine flour, baking powder, and salt. Mix well.
  4. Add dry ingredients in medium bowl to wet ingredients in large bowl. Mix well.
  5. Stir in 2 cups of granola and 1-½ cups of cheese. Mix well.
  6. Spread in the bottom of a lightly greased 13 x 9 baking pan.
  7. Top bars with remaining cheese and granola.
  8. Bake 20–24 minutes or until edges are lightly browned.
  9. Cool for at least 10 minutes before cutting bars.

To Serve:

  • Pack individual serving sizes in zip-top bags.

Fun Fact: Almost 90% of the cheese sold in the USA is Cheddar.
