Pizza In Your Pack: The Ultimate "Take-out Pizza"

Children will need help from an adult! Don't forget to drink water while you hike.

Yield: 4 servings

Serving Size: 1 English Muffin

Prep Time: 15 minutes

 

Ingredients:

  • 4 whole wheat English muffins
  • 1 tomato, washed
  • 8 slices of low fat cheese
    (American, cheddar or part- skim mozzarella)
  • Your favorite vegetables (Try chopped broccoli, sliced peppers, onion or mushrooms)


Equipment:

  • Knife
  • Aluminum foil

Directions:

  1. Slice English muffin in half, lightly toast if desired.
  2. Cut tomato into slices.
  3. Add one slice of tomatoes to each English muffin.
  4. Layer one piece of cheese on each half.
  5. Add any of your favorite veggies.

To Serve:

  • Wrap each half in foil.
  • Place the pizza with a frozen water bottle or ice pack in an insulated container to keep it cool on the trail.

Fun Fact: Cheese is an excellent source of calcium!!
