Lolly Mix Stix

Children will need help from an adult! Don't forget to drink water while you hike.

Yield: 10 servings

Serving Size: 1 Snack Mix on a Stick

Prep Time: 15 minutes

Stand Time: 30 minutes

Ingredients:

  • 3 cups miniature marshmallows
  • 2 Tbsp butter, margarine, or spread (spread must have more than 65% vegetable oil)
  • 1/4 cup creamy peanut butter
  • 4 cups toasted oats cereal
  • 1/2 cup diced dried fruit, dried berries, or raisins
  • 1/3 cup nuts

Equipment:

  • Baking sheet
  • Wax paper
  • Saucepan
  • Wooden spoon
  • Plastic wrap
  • 10 wooden sticks with rounded ends

Directions:

  1. Cover baking sheet with wax paper.
  2. Heat marshmallows and butter in a saucepan over low heat, stirring constantly with a wooden spoon, until marshmallows are melted and mixture is smooth.
  3. Stir in peanut butter. Remove from heat.
  4. Stir in toasted oats, dried fruit, dried berries, or raisins, and nuts until evenly coated.
  5. Let stand about 2 minutes or until the mixture is cool enough to handle.
  6. Shape mixture into balls (about the size of a small orange), using clean hands.
  7. Insert wooden stick into the center of each ball.
  8. Place on baking sheet lined with wax paper. Let stand about 30 minutes or until firm.
  9. Wrap balls in plastic wrap.

 

Fun Fact: It takes about 550 peanuts to make a 12-oz jar of creamy peanut butter.
