Children will need help from an adult! Don't forget to drink water while you hike.

Bake Time: 25 - 30 minutes

Ingredients:

  • 3/4 cup all-purpose flour
  • 1/2 cup sugar (reserve 1 Tbsp)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 3 ounces dried cherries
  • 2/3 cup low-fat buttermilk
  • 1/2 tsp vanilla extract

Equipment:

  • 8 x 8 x 2 baking pan, sprayed
    with cooking spray
  • 2 small mixing bowls
  • Whisk
  • Mixing spoon
  • Measuring cups
  • Measuring spoons
  • Zip-top bags

Directions:

  1. Alter the position of your oven racks, dividing the oven into thirds.
  2. Preheat oven to 350° F.
  3. In first small bowl, combine flour, sugar, cocoa powder, baking soda, and salt. Stir in dried cherries with mixing spoon.
  4. In second small bowl, mix buttermilk and vanilla together.
  5. Add buttermilk mixture to flour mixture and stir until just blended.
  6. Spread batter into baking pan.
  7. Sprinkle batter with 1 Tbsp of reserved sugar.
  8. Bake in upper third of oven for 25 – 30 minutes.
  9. Remove bars from pan and cool completely.
  10. Cut into 16 equal bars.

To Serve:

  • Place individual serving sizes into a zip-top bag.
