cups bran flakes cereal

mashed ripe fruit (try berries, peaches, bananas,
pumpkin puree)
- 2/3 cup
skim milk
- 1 egg
- 3 Tbsp
vegetable oil
- 1 cup
wheat or all-purpose flour
- 1/4 cup
sugar
- 2 tsp
baking powder
- 1/4 tsp
baking soda
- 1/8 tsp
ground nutmeg

Directions:
- Preheat
oven to 400° F.
- Paper line
each muffin cup.
- Mix bran
cereal, fruit, milk, egg, and oil in a large mixing bowl.
- Let stand
5 minutes.
In separate bowl:
- Combine
flour, sugar, baking powder, baking soda, and nutmeg.
- Add cereal
mixture to flour mix, and stir until just moist. Don’t stir
too much. The batter should be lumpy.
- Divide evenly
into muffin baking cups.
- Bake 20
– 25 minutes or until golden brown.
- Remove from
oven and let cool.
To
Serve:
- Pack each
muffin into a zip-top bag.
