Fruity Flaky Muffins

Children will need help from an adult! Don't forget to drink water while you hike.

Yield: 12 muffins

Serving Size: 1 muffin

Prep Time: 20 minutes

Bake Time: 20 - 25 minutes

Ingredients:

  • 1-1/2 cups bran flakes cereal
  • 1 cup mashed ripe fruit (try berries, peaches, bananas, pumpkin puree)
  • 2/3 cup skim milk
  • 1 egg
  • 3 Tbsp vegetable oil
  • 1 cup wheat or all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp ground nutmeg

 

Equipment:

  • 2 large mixing bowls
  • Measuring cups
  • Measuring spoons
  • Mixing spoon
  • Muffin tin
  • Muffin cup liners
  • Zip-top bags

Directions:

  1. Preheat oven to 400° F.
  2. Paper line each muffin cup.
  3. Mix bran cereal, fruit, milk, egg, and oil in a large mixing bowl.
  4. Let stand 5 minutes.
In separate bowl:
  1. Combine flour, sugar, baking powder, baking soda, and nutmeg.
  2. Add cereal mixture to flour mix, and stir until just moist. Don’t stir too much. The batter should be lumpy.
  3. Divide evenly into muffin baking cups.
  4. Bake 20 – 25 minutes or until golden brown.
  5. Remove from oven and let cool.

To Serve:

  • Pack each muffin into a zip-top bag.

Fun Fact: Apples and peaches are members of the rose family.
