Directions:
- Preheat
oven to 400° F.
- Paper line
each muffin cup.
- In a large
bowl, mix flour, oatmeal, sugar, salt, and baking powder.
- Mix in blueberries.
In separate bowl:
- Combine
flour, sugar, baking powder, baking soda, and nutmeg.
- Add cereal
mixture to flour mix, and stir until just moist. Don’t stir
too much. The batter should be lumpy.
- Divide evenly
into muffin baking cups.
- Bake 20
– 25 minutes or until golden brown.
- Remove from
oven and let cool.
To
Serve:
- Pack each
muffin into a
zip-top bag.
