Banana Bars - Best for backpacking

Children will need help from an adult! Don't forget to drink water while you hike.

Yield: 9 servings

Serving Size: 1 bar

Prep Time: 15 minutes

Bake Time: 20-25 minutes

Ingredients:

  • 2/3 cup sugar
  • 1/2 cup low-fat sour cream
  • 2 tbsp margarine or butter
  • 2 egg whites
  • 3/4 cup mashed bananas
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 2 tbsp chopped walnuts

Frosting

  • 1-1/4 cup powdered sugar
  • 1 tbsp butter or margarine
  • 1 to 2 tbsp skim milk
  • 1/2 tsp vanilla

Equipment:

  • 9 x 9 x 2 inch pan
  • Mixer
  • Large mixing bowl
  • Measuring cups
  • Measuring spoons
  • Nonstick cooking spray
  • Zip-top bags

Directions:

Bars:

  1. Preheat oven to 450°F.
  2. Spray pan with nonstick
    cooking spray.
  3. Beat sugar, sour cream, margarine, and egg whites in large bowl for 1 minute with a mixer.
  4. Beat in bananas and
    vanilla for 30 seconds.
  5. Beat in flour, salt and
    baking soda for 1 minute.
  6. Stir in nuts.
  7. Spread in pan.
  8. Bake 20-25 minutes or until light brown. Cool and frost.

Frosting:
Mix all ingredients together
until smooth.

To Serve:

  • Pack individual serving sizes in zip-top bags.

Fun Fact: An ear of corn averages 800 kernels in 16 rows.
